Current Research Interests are split into three main divisions: 1) Food and Bioprocessing Sciences - This established group's research covers basic science and engineering studies concerned with laboratory separation science; enzymatic processing; flavour science; macromolecular interactions; food processing for health outcomes; pilot plant manufacturing and downstream processing. 2) Food Microbial Sciences - Microbiology research has been a major recent development for the School and provides impetus into anaerobic gut microbiology and microbial food safety. These microbial sciences are underpinned by modern molecular biological principles including culture independent microbiology, gut modelling and human volunteer studies. 3) Human Nutrition - There has been considerable expansion of the Human Nutrition Group. New research in nutritional immunology, antioxidants, dietary lipids and genotypic variation, and endothelial cell genomics have complemented and extended existing strengths in postprandial lipoprotein metabolism, dietary fatty acids and cardiovascular disease.
